If you’re looking for a gluten-free and dairy-free small batch chocolate chip cookie recipe, this is it! These cookies are made with almond flour, oat flour as well as a key ingredient for gluten-free baking, psyllium husk, also known as psyllium fiber. Psyllium husk, when combined with liquid, forms a gel which acts as a binder in place of gluten and helps to improve the structure and texture of baked goods.

Benefits of Psyllium Husk

Psyllium husk, or psyllium fiber, is a natural prebiotic, helping to promote the growth of beneficial microorganisms to support gut health and healthy gastrointestinal function. Psyllium husk is also found to help increase feelings of satiety, or fullness to help curb hunger between meals. Lastly, we know that a fibrous diet is known to support heart health and help maintain healthy levels of cholesterol!

Benefits of Almond Flour

Almond flour is made from almonds and is a great flour gluten-free baking. Blanched almond flour is made from almonds where the skin is removed, yielding a better texture and consistency for baking. Therefore, I always recommend baking with blanched almond flour versus simply almond flour. Almonds are packed with fiber and are a source of the antioxidant vitamin E!

Benefits of Oat Flour

Oat flour is made from ground oats. Oats provide many health benefits including being a source of fiber to support digestion, gut health, heart hearth and bowel regularity. Oats are naturally gluten-free and can be a nutritious gluten-free baking flour. Oats also contain beta-glucan which may help to lower “bad” LDL cholesterol levels, helping to improve cholesterol levels overall. While oats are naturally gluten-free, buy oats that are certified gluten-free to ensure a truly gluten-free flour and avoid cross-contamination. I also love to make my own gluten-free oat flour, which is an easy way to turn the oats you likely already have in your pantry into flour for baking.

Chocolate Chip Cookies with Organic Whole Husk Psyllium 

Makes 12 Cookies

Dry Ingredients:

1 cup blanched almond flour

1 cup oat flour

½ teaspoon baking soda

½ teaspoon salt

¼ teaspoon cinnamon

Wet Ingredients:

2 teaspoons psyllium husk 

3 tablespoons water

2 eggs 

½ cup maple syrup

¼ cup coconut oil, melted

2 teaspoon vanilla extract

Additions:

1 cup chocolate chips

Directions:

Preheat the oven to 350 degrees Fahrenheit. In a large bowl add the dry ingredients and mix to well combine. In a small bowl add the psyllium husk and water, mix together and let set for 3-5 minutes until a gel-like consistency. Add in eggs and whisk together. Then add maple syrup, coconut oil and vanilla extract and whisk together. Add wet ingredients to dry ingredients and fold together. Lastly, fold in chocolate chips. On a baking sheet lined with a baking mat or parchment paper, add scoops of cookie dough. I love to use an ice-cream scoop for an even amount. Shake the baking sheet for the cookie dough to slightly flatten and spread. Bake for 18 minutes. Optional, but at the 5 minute mark take the cookies out and slam the cookie sheet down on the counter to help flatten the cookies if you prefer a thinner cookie. Let cookies cool on a cooling rack before enjoying! Store in an air-tight container in the refrigerator and enjoy it for 5 days.

I love to make a batch of these cookies on the weekend and enjoy an afternoon treat with my kids throughout the weekday! These cookies are delicious cold or simply placed on a baking sheet in the oven at 350 degrees for a few minutes to warm, and enjoy the taste of a freshly baked cookie all over again!

I love making these easy homemade dog treats for our dog Ruby. They are made with just 4 simple ingredients; oats, peanut butter, banana and water.

You will need one and a half cup of rolled oats, one ripe banana and a fourth of a cup of peanut butter. For my dog, I buy unsweetened and unsalted peanut butter and this is the brand that I like. You’ll also add two tablespoons of water. 

In a food processor, add the oats, banana, peanut butter and water and mix until it creates a very sticky dough.

Then you’ll take a piece of parchment paper on your countertop and add the sticky dough onto the parchment paper. Then place another piece of parchment paper on top and this is going to help keep the dough from sticking to your rolling pin. 

You’ll use a rolling pin to roll out the dough until it’s nice and smooth about a quarter of an inch thick. If the dough is too thin then the cookies will overcook and become too crispy.

Use any cookie cutter shape of choice that you like. I’m using this little flower shape and you’re going to just cut out the shapes of your cookies out of the dough and place on a baking sheet. I also like to bake on a piece of parchment paper for ease. 

You’ll notice that you may have extra dough, so just roll it back into a ball and follow the same steps of covering it with parchment paper, rolling it out and cutting out more cookie shapes so that you’re using up all of your dough. 

Then bake in the oven at 325 degrees Fahrenheit for 20-25 minutes until golden brown. Avoid over-baking them, which can make the cookies too hard and crispy. We want them to be soft and easy and safe for your dog to enjoy. 

Then Ta Da! The cutest, most delicious homemade dog treats are made with simple wholesome ingredients that my dog loves, but my kids also love them too because they’re made with just oats, banana, peanut butter and a little bit of water.

Then store these cookies in an airtight container in the fridge.

These are the BEST gluten-free chocolate chip cookies in my opinion! They are soft, generous with chocolate chips and are packed with wholesome ingredients! These cookies just hit the spot when you want a good chocolate chip cookie that aligns with your goals of wholesome eating!

Is this recipe vegan?

Yes! This recipe is gluten-free, dairy-free, egg-free and vegan!  

What can I use to substitute the banana, if I don’t like bananas?

Unfortunately, I have not tried this recipe with another fruit or vegetable in place of the banana and therefore I could not guarantee a recommendation that would yield an equally satisfying result in test and texture. Swaps that come to mind however that may work include cooked sweet potato, cooked pumpkin and possibly applesauce! If using applesauce I would omit the water. 

What gluten-free flour can I use to substitute the oat flour? 

Gluten-free flours vary greatly in the end result when it comes to baking. This is due to the fact that gluten-free flours absorb liquid at different capacities which can yield either a crumbly dry texture or gummy texture. Therefore, most gluten-free flour swaps are not an equal one cup to one cup exchange. The only gluten-free flour that I would recommend is almond flour (which will yield a more dense and dry texture) or a gluten-free flour baking mix such as this one. 

What are the health benefits of oats?

I love using oats for baking because they add fiber, protein and a boost of vitamins and minerals. Oats are also affordable and versatile! By simply blending oats into a powder, you can create oat flour. Leave the oats whole and you can make oatmeal, overnight oats, energy bites, energy bars and so much more. Studies show that regular consumption of oats may support weight loss, better blood sugar levels and support heart health. A half a cup of oats contains 5.3 grams of protein, 4 grams of fiber as well as a variety of vitamins and minerals such as manganese, phosphorus, copper, iron, zinc, folate, vitamin B1, vitamin B5 as well as calcium and potassium. 

Do oats contain Glyphosate?

Glyphosate is an herbicide used to kill weeds. Glyphosate residues have been found on some foods such as cereals and grains, including oats. For those concerned about glyphosate residues related to oats, choosing an Organic oat or even better an Organic oat that is certified Glyphosate-free such as this one. 

Can I use a different sweetener than maple syrup?

I LOVE using maple syrup in my recipes as a sweetener because it provides a boost of vitamins and minerals, whereas traditional white granulated sugar is void of nutrition. Maple syrup also provides a rich flavor profile! You could swap the maple syrup for granulated sugar although this would yield a crispier cookie versus a soft cookie. 

Are cookies really healthy?

These cookies are homemade and made with a variety of real, whole foods that are packed with protein, fiber, antioxidants, vitamins and minerals. Traditional store-bought cookies are highly processed and often lacking in fiber or any nutritional value. In my opinion, this is a GREAT option for a decadent treat that is still nourishing for the body! As someone who likes to eat cookies regularly, I love making these cookies for myself and for my husband and children knowing that they are enjoying a treat and nourishing their body at the same time. 

How long do these cookies last?

Keep these cookies in an air-tight container in the refrigerator and enjoy them for 5 days. You can also store these cookies in the freezer and enjoy them within 3 months. Because these cookies do not contain preservatives I would not store them in the pantry or any warm environment, which could lend to mold growth. 

What bakeware do you use?

I love using a Silpat for baking cookies such as this one and the cooking sheet I have is this one!

The BEST Gluten-Free Chocolate Chip Cookies

Servings 0

Ingredients

  • 2 cups rolled oats
  • 2 bananas
  • cup peanut butter
  • ¼ cup maple syrup
  • ½ teaspoon vanilla extract
  • 3 tablespoon water
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • 2 tablespoons ground flaxseeds
  • cup chocolate chips

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Blend 2 cups of oats in a high-speed blender to create a fine powder, which is the flour for the recipe.
  • In a medium bowl mash 2 bananas until you create a smooth paste. Then add in all wet ingredients; the maple syrup, peanut butter, vanilla extract and water.
  • Add in salt, ground flaxseeds, cinnamon and oat flour and mix together well.
  • Lastly, fold in the chocolate chips. This recipe calls for ¼ cup of chocolate chips but truly, you should measure chocolate with your heart! Feel free to add more chocolate chips if desired.
  • Using a small ice-cream scoop or spoon dollop of even size batter onto a baking sheet lined with a silpat, parchment paper or lightly greased with coconut oil.
  • Bake cookies for 15 minutes and then let cool on a cooling rack.
  • Store in an air-tight container in the refrigerator and enjoy them for 5 days. You can also store these cookies in the freezer and enjoy them within 3 months. These cookies are delicious cold or you can simply reheat in the oven for 1-2 minutes if you prefer a gooey warm chocolate chip cookie.

Apple Cookies

Servings 6

Equipment

  • Small shape cookie cutters Basic shapes such as: circle, star, square, triangle, hexagon, oval.

Ingredients

  • 2 red apples
  • 2 green apples
  • 1/2 cup peanut butter

Instructions

  • Wash and dry apples
  • Carefully slice all of the apples horizontally, into 1/2 inch thick rounds. You'll want 12 total round apple slices.
  • Use small shaped cookie cutters to cut out the cores. You'll need a bottom and a top piece for each cookie, so each shape should have a bottom apple piece and a top apple piece.
  • Spread 1 tablespoon (or more) of peanut butter between each matched pair to create your apple cookies, enjoy!

Health Benefits of Ingredients

Almonds

Almonds are high in healthy monounsaturated fats, protein and important
nutrients such as manganese and Vitamin E. Almonds are also high in fiber, which helps you feel full longer!

Oats

Oats are a complex carbohydrate, which can help you feel full longer. Oats also contain protein, fiber and iron. Consuming plant-based sources of iron with vitamin C rich foods, such as the orange in this recipe, will help your body absorb the iron better. Your body needs iron to aid your cells in carrying oxygen throughout the body.

Zesty Orange Cranberry Bars

Prep Time 10 minutes
Freeze 3 hours
Servings 0

Ingredients

  • 2 tbsp juice from a Limoneira Mandarin Orange
  • 1 tbsp zest from a Limoneira Mandarin Orange
  • 1 cup almond butter
  • 1/4 cup honey
  • 1/3 cup slice almonds
  • 1/2 cup cranberries
  • 2 cups rolled oats

Instructions

  • Begin by mixing the juice, zest, almond butter and honey together.
  • Then add the sliced almonds and cranberries, stir together and finally stir in the rolled oats.
  • Use a freezer safe dish around 9 x 8 inches, lined with a small piece of parchment paper.
  • Add the mix and press down until it is flat and well compacted.
  • Finally add the zest on top and freeze for a minimum of one hour, but these are best after 3 or more hours.
  • Cut and enjoy!

Oranges

Bananas

Orange Oatmeal Breakfast Cookies

Ingredients

  • 1 Limoneira valencia orange
  • 1/2 cup mashed banana
  • 1/3 cup real maple syrup
  • 1/2 cup oat flour

  • 1/2 cup sliced almonds

Instructions

  • Preheat oven to 350 degrees Fahrenheit. 
  • Zest orange and set aside. 
  • In a mixing bowl, add juiced orange, maple syrup, mashed banana, flax seed, cinnamon, salt and baking soda. Whisk to combine.
  • Add flour and oats and stir to combine.
  • Pour in almond sliced and stir. Chill dough in the fridge for 20 minutes.
  • On a greased baking sheet, roll dough into small balls and flatten on baking sheet. Top with more sliced almonds. Bake for 20 minutes.
  • Let cool, top with orange zest and enjoy.

This recipe is inspired by my Mother In Law who loves to make these every holiday season and they are one of my husbands favorite treats.

What’s great about these cookies is you can make as few or as many as you would like. So simple and delicious!

Peanut Butter Chocolate Cookie Sandwiches

Ingredients

  • Golden Round Crackers⁠
  • Peanut Butter - or any nut or see butter you prefer⁠
  • Chocolate chips - I love dark chocolate!⁠

Instructions

  • Make peanut butter sandwiches by adding a small dollop of peanut butter onto one cracker and top with another cracker.
  • Then line a baking sheet with parchment paper.
  • Using a double boiler (or a smaller pot on top of a larger pot) fill pot with water and bring to a bowl. Pour chocolate chips into pot on top and stir continuously until melted. I like to melt about 1/3 a cup of chocolate chips at a time. You may need to add more chocolate chips and melt again if you're making lots of cookies 🙂
  • Place one cracker sandwich at a time into melted chocolate and flip until fully coated with chocolate, I like to use 2 forks for this process! Then transfer to baking sheet with parchment paper. Place in the fridge to set overnight and then... ENJOY!!! ⁠

Notes

Optional - top with sea salt before placing in the fridge!⁠

The crackers I used to demo this recipe are not gluten-free but there are gluten-free golden rounds!! ⁠

I did not include exact ingredient amounts because you can make as many or as few of these as you want!! Super easy for whenever you're in the mood for a small treat or make a bunch and gift away!⁠

Also credit for this recipe goes to my MIL!!! She likes to make this treat during the Holidays and it's been a favorite of my husbands... so simple and delicious!! ⁠

Today I’m sharing 3 plant-based and gluten-free Holiday desserts that we love and a big thanks to Maple from Canada for sponsoring today’s video. If you’ve been watching our videos for a while you know that I love maple syrup as a natural sweetener option, so all of my recipes today will feature pure maple syrup from Canada. 

First we’re making a Gingerbread Maple Loaf! This loaf is a great addition to a holiday breakfast or bake and gift to someone you love! This loaf is gluten-free, dairy-free and made with real, wholesome ingredients such as rolled oats, almond flour, lemon juice and maple syrup. I love that pure maple syrup from Canada is derived directly from the maple tree’s sap and when consumed in moderation, can be part of a healthy diet.

Gingerbread Maple Loaf

Prep Time 10 minutes
Cook Time 55 minutes

Ingredients

  • 2 cups rolled oats
  • 1/4 cup coconut flour
  • 1/2 cup Real Maple Syrup from Canada
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon ginger powder
  • ¼ teaspoon sea salt
  • 3 tablespoons lemon juice
  • 1 ½ cup non-dairy milk
  • 2 eggs

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Add oats to the blender and blend into a fine consistency.
  • Add in the rest of the ingredients and blend until smooth.
  • Pour batter into a lightly greased loaf pan and bake for 55 minutes.
  • Let the bread cool and whisk the maple icing ingredients together. Enjoy!

What’s better than pie? MINI PIES! These cute and tasty pecan maple mini pies are a great Holiday dessert offering or if you bake treats for your neighbors! I love that this recipe includes real, whole food ingredients that add a boost of nutrition such as fiber, vitamins and minerals. One of the reasons I love maple syrup as a sweetener is because it has a bonus of nutrients. Pure Maple syrup is an excellent source of manganese and a good source of riboflavin. In fact, one serving of pure maple syrup (2 tablespoons) contains 35% of the Daily Value of Manganese and 15% for Riboflavin.

Pecan Maple Mini Pies

Prep Time 15 minutes
Cook Time 30 minutes

Ingredients

  • 1 16oz pie dough - store bought or homemade
  • 3/4 cup Real Maple Syrup from Canada
  • ¼ cup cassava flour
  • 2 large eggs
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1 ½ cup pecans

Instructions

  • Roll out the pie dough and cut out small circles 2-3 inches in diameter.
  • Gently press dough circles into a non-stick or lightly greased muffin tin.
  • In a medium bowl whisk the eggs, then add the remaining ingredients and mix together.
  • Pour the mixture into the dough cups.
  • Bake in a preheated oven at 350 degrees Fahrenheit for 20-30 minutes.

My favorite cookie is a chocolate chip cookie. My second favorite is a spice maple ginger cookie! Ginger is great for supporting digestive health, flaxseeds has fiber and heart healthy fats and when it comes to maple syrup, scientists have identified more than 67 different plant compounds, or polyphenols, nine of which are unique to pure maple syrup. One of these polyphenols naturally forms when the sap is boiled to produce maple syrup.

Spiced Maple Ginger Cookies

Prep Time 30 minutes

Ingredients

Wet Ingredients

  • cup unsweetened pumpkin puree
  • ¾ cup Real Maple Syrup from Canada
  • ¼ cup melted coconut oil
  • 2 tablespoon ground flax seeds

Dry Ingredients

  • 1 ½ cups Gluten Free All-Purpose Baking Flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon ginger powder
  • ¾ tsp baking soda
  • ¾ tsp baking powder
  • ¼ tsp salt

Instructions

  • In a medium bowl whisk all the wet ingredients together.
  • In a large bowl add all the dry ingredients and stir until fully combined.
  • Add the wet ingredients to the dry and mix until a sticker batter forms.
  • Scoop batter into a ball and chill covered in the fridge for 20 minutes.
  • Preheat the oven to 350 degrees Fahrenheit.
  • Break the dough into small balls about 1 inch in size; form into rounds and flatten with your hand.
  • For soft cookies bake 12 minutes; for crispier bake 14.
  • Let cool and enjoy!

Benefits of Gingerbread Spices

Ginger

Ginger may contain anti-inflammatory properties, which can be beneficial for reducing pain for people with arthritis or other inflammatory issues. Ginger is also loaded with antioxidants, which may help repair damaged cells and fight free radicals. This aids in lowering disease risk for things like high blood pressure and heart disease.

Nutmeg

Nutmeg has amazing warm and sweet flavors perfect in holiday recipes! It has anti-bacterial properties that may help with dental problems such as cavities and gum inflammation. It also has been shown in some animal studies to boost mood through its antidepressant effects.

Cloves

Cloves are a rich source of manganese! This is important for forming connective tissue in the body, blood clotting and plays a role in blood sugar regulation. Cloves may also help with stopping the growth of bacteria, which may be beneficial for oral health.

Orange Gingerbread Cookies

Ingredients

  • 3 cups gluten-free 1-to-1 baking flour
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon cardamom
  • ½ teaspoon nutmeg
  • ½ teaspoon cloves
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 tablespoon Limoneira orange zest
  • ½ cup coconut brown sugar
  • ¾ cup vegan butter
  • 1 egg or vegan egg replacer
  • ½ cup molasses
  • 1 tablespoon Limoneira orange juice

Icing Ingredients

  • 2 cups powdered sugar
  • 3 tablespoons non-dairy milk
  • ½ teaspoon vanilla extract

Instructions

  • In a medium bowl, whisk together flour, spices, baking soda and orange zest.
  • In a large bowl, cream together butter and sugar.
  • Add in egg, molasses and orange juice. Mix until smooth.
  • Next, add in half of the flour mixture and stir to combine. Add in the rest of the flour mixture and stir until fully combined.
  • Shape the dough and split into two.
  • On parchment paper, pat the dough balls into one-inch thick disc. Refrigerate for 1 to 2 hours.
  • Preheat oven to 350 degrees Fahrenheit.
  • Once dough has chilled, roll out using rolling pin until about ¼ inch thick.
  • Cut dough into desired shapes and carefully transfer to baking sheet.
  • Bake for 10 minutes.
  • Remove the cookies from the oven and allow them to cool.
  • Meanwhile, whisk the icing ingredients together in a large bowl until combined.
  • Decorate, add a little orange zest and enjoy!
