Almond flour is made from almonds and is a great flour gluten-free baking. Blanched almond flour is made from almonds where the skin is removed, yielding a better texture and consistency for baking. Therefore, I always recommend baking with blanched almond flour versus simply almond flour. Almonds are packed with fiber and are a source of the antioxidant vitamin E!

Benefits of Oat Flour

Oat flour is made from ground oats. Oats provide many health benefits including being a source of fiber to support digestion, gut health, heart hearth and bowel regularity. Oats are naturally gluten-free and can be a nutritious gluten-free baking flour. Oats also contain beta-glucan which may help to lower “bad” LDL cholesterol levels, helping to improve cholesterol levels overall. While oats are naturally gluten-free, buy oats that are certified gluten-free to ensure a truly gluten-free flour and avoid cross-contamination. I also love to make my own gluten-free oat flour, which is an easy way to turn the oats you likely already have in your pantry into flour for baking.

Chocolate Chip Cookies with Organic Whole Husk Psyllium 

Makes 12 Cookies

Dry Ingredients:

1 cup blanched almond flour

1 cup oat flour

½ teaspoon baking soda

½ teaspoon salt

¼ teaspoon cinnamon

Wet Ingredients:

2 teaspoons psyllium husk 

3 tablespoons water

2 eggs 

½ cup maple syrup

¼ cup coconut oil, melted

2 teaspoon vanilla extract

Additions:

1 cup chocolate chips

Directions:

Preheat the oven to 350 degrees Fahrenheit. In a large bowl add the dry ingredients and mix to well combine. In a small bowl add the psyllium husk and water, mix together and let set for 3-5 minutes until a gel-like consistency. Add in eggs and whisk together. Then add maple syrup, coconut oil and vanilla extract and whisk together. Add wet ingredients to dry ingredients and fold together. Lastly, fold in chocolate chips. On a baking sheet lined with a baking mat or parchment paper, add scoops of cookie dough. I love to use an ice-cream scoop for an even amount. Shake the baking sheet for the cookie dough to slightly flatten and spread. Bake for 18 minutes. Optional, but at the 5 minute mark take the cookies out and slam the cookie sheet down on the counter to help flatten the cookies if you prefer a thinner cookie. Let cookies cool on a cooling rack before enjoying! Store in an air-tight container in the refrigerator and enjoy it for 5 days.

This recipe is so simply all you need is honey and garlic and a glass jar.

What Is Fermentation

Fermentation is the process in which natural microorganisms such as yeast and bacteria secrete enzymes that then break down the sugars or starches of certain foods. The result of fermentation is the production of lactic acid and carbon dioxide, little gaseous bubbles that you typically see forming when you make fermented honey garlic or even during the process of sourdough bread.

The Health Benefits of Fermented Foods

Fermented foods are rich in naturally occurring probiotics which can support gut health, immune health and digestion. Studies have also shown a connection between gut health and cognitive health. Therefore, a healthy gut may help to improve mental health, mood regulation as well as cognitive function.

How To Make Fermented Honey Garlic

First, peel garlic cloves from the garlic bulb. The exact amount does not matter however I aim to have about 1 cup of garlic cloves. Add the garlic cloves to a small glass jar and top with 1 teaspoon of apple cider vinegar, commonly referred to as ACV. This step is completely optional, however it can provide peace of mind for those we are worried about botulism related to honey and the bacteria growth that occurs during the fermentation process. It is very unlikely that botulism would grow with this recipe. However, for peace of mind you can add 1 teaspoon of apple cider vinegar which will improve the pH making the environment unfavorable for botulism. In addition, never feed honey or fermented honey garlic to babies ages one year old and younger. Fill the jar with raw local honey that has not been pasteurized leaving a small bit of room at the top, as during the fermentation process the honey will bubble. Pasteurized honey is highly processed and during the pasteurization process, key health benefits and nutrients of honey are lost. When you buy and consume raw honey you ensure that the amazing health benefits of honey are intake. Add a lid and place in a cool dark place such as the pantry. I like to add to a small bowl under the jar as the honey can bubble over and spill out as it starts to ferment. Every day secure the lid on tight and rotate a few times to ensure the garlic is fully coated with honey. Then slightly loosen the lid once it’s upright again. Continue this pattern for one month and then enjoy! You can technically eat the garlic or honey at any time during the month. However, waiting the full month will ensure a truly potent fermented honey garlic. Enjoy!

How To Eat Honey Garlic

Fermented Honey Garlic has many wonderful medicinal properties and therefore you can enjoy the honey straight by the spoonful or pop a clove of honey garlic for a flavorful and potent treat that will support your immune system!

You can also use fermented honey garlic in any recipe or beverage where you would naturally add honey or garlic such as on toast, in homemade salad dressings, to sauces, a cup of tea and beyond.

Please note that the amount of garlic and honey is flexible. They key is that the honey full coats the garlic. Therefore, you can adapt the quantity of garlic or honey to fit the size of jar that you have along with how much fermented honey garlic you want to make.

This gluten-free, dairy-free dessert is easy to make and perfect for all seasons. Every time I make this cobbler I am told it’s the best cobbler, and I have to agree, it’s just that delicious!

In July we hosted family visiting from out of town and so I made my favorite apple cobbler. This time I added a fun cinnamon sugar quilted pattern on top using parchment paper as a stencil. See the recipe below and I hope you’ll make and enjoy this simple, delicious dessert as well!

Gluten-Free Apple Cobbler

This gluten-free and dairy-free dessert is perfect for all seasons! This recipe is ideal for a 9 x 13 glass baking dish. I have cut the recipe in half for a smaller serving… but let's be honest! We are always bummed when the cobbler is gone, so the more the better 🙂

Equipment

  • 1 9 x 13 glass baking dish
  • 1 mandoline food slicer
  • 2 mixing bowls
  • 1 spatula
  • measuring cups and spoons
  • 1 piece of parchment paper, pencil and x-acto knife
  • Oven

Ingredients

Apple Layer

  • 10 granny smith apples (or apple of choice)
  • 2 tsp teaspoons lemon juice
  • 2 tbsp tablespoons arrowroot flour
  • 1/4 cup cup maple sugar (or sugar of choice)

Cobbler Crust / Topping

  • 2 cups cups of blanched almond flour
  • 1 cup oat flour ( or you can use more almond flour or a gluten-free baking flour)
  • 1 cup arrowroot flour 
  • 3 tbsp baking powder (aluminum free)
  • 1/2 tsp salt
  • 1/2 cup maple syrup (or sugar of choice)
  • 1/2 cup coconut oil
  • 2/3 cup unsweetened non-dairy milk
  • 1 tsp vanilla extract

Quilt Stencil Layer

  • Cinnamon
  • Sugar

Instructions

  • Preheat the oven to 375 degrees Fahrenheit.
  • Thinly slice (I like using a mandoline) the apples and add to a medium size bowl. Add all other apple layer ingredients and gently fold together so the apples are evenly coated. 
  • In a separate medium bowl add all the crust ingredients and mix together to create a dough consistency. 
  • In a 9 x 13 baking dish, layer your apples evenly. Then (I like to use my hands for this) take palm size handfuls of the dough and flatten smooth and place on top of the apples, continuing until the apples are fully and evenly covered. 
  • To make your quilt stencil… design your quilt pattern on a piece of parchment paper and use a (clean) x-acto knife to cut out the shapes / triangles. Press the parchment paper on top of the cobbler gently. In a bowl mix together cinnamon and sugar and sprinkle on top of parchment paper patting in with your fingers the open spaces to fully fill the design. Carefully remove parchment paper. 
  • Bake in the oven at 375 degrees for approximately 40 minutes until golden brown. Best enjoyed right away with a dollop of ice-cream! Also best enjoyed for breakfast the next morning with a cup of coffee. Enjoy!

One of my favorite ways to enjoy mushrooms is in these Mushroom Carnitas Tacos. Tacos are an easy, healthy dinner recipe and I also love that this plant-based dinner is also packed with flavor and fiber that keeps us feeling full.

How To Make Mushroom Carnitas Tacos

You’ll need 1 pound of oyster or shiitake mushrooms, I like a little of both! Slice the mushrooms into thin strips and then place in a bowl with oil and spices. Let marinate for 15 minutes. Then roast in the oven at 425 F for 30 minutes, stirring occasionally, until browned. Top with fresh lime juice and cilantro. Serve on warmed tortillas topped with black beans, a jicama, carrot and cabbage slaw and avocado!

How To Make Jicama, Carrot, Cabbage Slaw

To make the slaw, shred jicama, cabbage and carrots and add to a small bowl. Top with juice from one lime, fresh cilantro (chopped) and a pinch of salt. Toss and let marinate in the fridge.

Mushroom “Carnitas” Tacos

Ingredients

Tacos

  • 4 tortillas
  • mushroom “carnitas” see below
  • 1/2 cup black beans
  • jicama slaw see below
  • 1/2 avocado

Mushroom "Carnitas"

  • 1 pound mushrooms – King Oyster and/or Shiitake
  • 3 limes
  • 1 navel orange
  • 2 tablespoons avocado oil
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Fresh cilantro

Jicama Slaw

  • 1/2 cup shredded jicama
  • 1/2 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1 lime
  • 1/4 cup fresh cilantro
  • 1 pinch sea salt

Instructions

Mushroom "Carnitas"

  • Juice the navel orange and 2 limes into a small bowl, add the oil and spices then whisk.
  • Slice mushrooms into strips. Add to a large bowl and toss with the marinade.
  • Let marinate in fridge for 15 minutes.
  • Lay on a baking sheet and roast at 425 F for 30 minutes, stirring occasionally, until browned.
  • Remove from the oven and top with lime juice and fresh cilantro.

Little Gem Lettuce

Little gem lettuce is an English heirloom variety of romaine lettuce! It has a similar flavor profile and crunch to romaine while being smaller and in my opinion, more fun to eat!

How To Make This Vegan Dilly Ranch Dressing

I love this simple dairy-free and vegan ranch dressing recipe. This salad dressing is made with just a few simple ingredients, fresh herbs and is a great creamy dressing. I also love that this dressing is made from cashews which packs protein, fiber and healthy fats to this salad! To make this dairy-free ranch dressing you’ll add 1 cup of raw cashews to a container (I like to use a mason jar like this one) and fill with filtered water. Cover and place in the refrigerator to soak overnight. In the morning, drain the water from the cashews and rinse them. Add the soaked cashews into a blender along with 3/4 to 1 cup of fresh, filtered water – less if you prefer a thicker dressing and more if you need the consistency to be thinner. Then add the garlic powder, onion powder and lemon juice. Blend on high until you get a smooth creamy consistency. Next add the herbs, salt and pepper and blend in a few short pulses to incorporate the herbs.

Little Gem Salad

To a plate or bowl add your little gem lettuce (I like a few handfuls!) and top with slices of cucumber, radish, olives and a generous drizzle of dilly ranch dressing. Sprinkle with hemp seeds (I love these!) and fresh dill, chives and parsley. Enjoy!

Little Gem Salad with Vegan Dilly Ranch Dressing

This salad makes 1 serving however, the dressing will make MULTIPLE servings!! Store the dressing in the refrigerator and enjoy for days on a salad or as a dip for fresh cut veggies!

  • 1 cup raw cashews: soaked overnight then drained & rinsed
  • 3/4 – 1 cup filtered water

  • 1/4 cup diced fresh chives
  • 1/4 cup diced fresh dill

  • 2-3 handfuls little gem lettuce
  • 1 cucumber
  • 4 radish

  • In a high-speed blender add the cashews (soaked overnight, drained & rinsed), filtered water, garlic powder, onion powder and lemon juice
  • Blend on high until smooth
  • Add the herbs, sea salt and black pepper and blend for a short time to incorporate the herbs

Little Gem Salad

  • Add little gem lettuce, rinsed and dried to a serving plate
  • Add sliced cucumbers, sliced radish, black olives and a drizzle of the Dilly Ranch Dressing

How A Plant-Based Diet Supports Gut Health

One of my goals with feeding my family is to add a variety of vegetables to our lunches and dinners. According to the American Gut Project, we know that eating 30+ different plant-based foods in a week is associated with better bacterial diversity in the gut. This is important because our gut health not only impact digestive health, it also impacts our immune health, hormone health, mood, cognitive function, energy levels and more! I am always looking for ways to add more vegetables into our meals and this dish is a great way to rack up your plant-points! In fact this dinner has 13 + different plant-based ingredients!

How To Make Teriyaki Sauce

Homemade sauces used to intimidate me! However, the more you play around with ingredients and try out new sauce or dressing recipes the more your kitchen confidence builds! I love making homemade sauces not only to help control the exact ingredients and leave out ingredients I don’t want, but also because I often find they taste so much better than most store-bought options!

This teriyaki sauce is made with a few simple ingredients such as:

Avocado oil

Liquid aminos or try Soy-Free Liquid Aminos

Filtered Water

Real Maple Syrup

Brown Rice Flour

Sriracha or try Veggie Sriracha

Ginger Powder

Garlic Powder

To make the teriyaki sauce, add all sauce ingredients to a small pot and whisk together. Warm sauce over low / medium heat until you see the first bubbles, then turn the heat off, stir and let sit. Be careful not to over cook the sauce, but if you do simply whisk in a tablespoon or two of water.

Ingredients

  • 1 cup brown rice (dry)
  • 1 tbsp cooking oil (coconut or avocado oil)
  • 1 cup mushrooms
  • 1 orange bell pepper
  • 1 cup grape tomatoes
  • 1 cup black beans
  • 1 cup spinach
  • 1 cup green cabbage
  • 1 tbsp black sesame seeds
  • 1 tbsp white sesame seeds

Teriyaki Sauce

  • 1/4 cup avocado oil
  • 1/4 cup liquid aminos
  • 1/4 cup filtered water
  • 2 tbsp real maple syrup
  • 1 tbsp brown rice flour
  • 1 tsp sriracha
  • 1/4 tsp ginger powder
  • 1/4 tsp garlic powder

Instructions

  • Cook brown rice according to package instructions.
  • Dice mushrooms, slice orange bell pepper and cut tomatoes in half.
  • Heat cooking oil over medium heat, add mushrooms, bell pepper and tomatoes. Saute for 8-10 minutes. Then add black beans and cook for 2-3 more minutes.
  • To make the teriyaki sauce, add all sauce ingredients to a small pot and whisk together. Warm sauce over low / medium heat until you see the first bubbles, then turn the heat off, stir and let sit. Be careful not to over cook the sauce, but if you do simply whisk in a tablespoon or two of water.
  • Thinly slice spinach and cabbage.
  • Build bowls with rice, spinach and cabbage, cooked veggies, top with sauce and sesame seeds. Enjoy!

Making This Meal For Kids

What’s great about this meal is that you can easily customize it to meet various dietary preferences of your family. For meat eaters, add chicken or salmon! For kids you can deconstruct and offer beans & rice with teriyaki sauce and veggies on the side!

This dish is also great with brown rice noodles, quinoa, black rice or any other grain or gluten-free grain you prefer!

In our smoothie today we’re adding a handful of nourishing and delicious ingredients such as banana, spinach, mango, almond butter and almond milk! Let’s learn about the health benefits of two of these foods below!

Health Benefits of Bananas

Bananas contain potassium which supports heart health and muscle function. Bananas are also rich in fiber which is important for digestive health.

Health Benefits of Spinach

Iron carries oxygen in the blood within our body which is really important to support our brain and muscle function and to give us energy!

A smoothie is made in a blender! Blenders have a sharp blade that turns solid foods into smaller pieces. Pieces so small that it can even become a smooth creamy smoothie! Because blenders have a sharp blade they can be dangerous, so it’s always best to ask a grown up to use a blender to help you make a recipe!

Super Smoothie

Servings 1

Ingredients

  • 1 banana
  • 1 cup frozen mango
  • 1 cup spinach
  • 1 cup almond milk
  • 1 tbsp almond butter

Instructions

  • Add all ingredients into a high-speed blender and blend until smooth.

Green Smoothies!

This smoothie turned the color green because of the spinach! Spinach contains an important nutrient called Iron. Iron carries oxygen in the blood within our body which is really important to support our brain and muscle function and to give us energy! Isn’t it amazing that different foods help our body be so healthy and do all the things we need to do in a day like run, jump, play, sing and dance! Here are some other foods that contain Iron!

If you follow me on Instagram, you know we’ve been chatting about grocery budgets and meal planning! I shared with you that my goal this year is to grocery shop once a week and to meal plan for the entire month at once to help organize my shopping. Below is our January Family Dinners Meal Plan, I hope it gives your inspiration or ideas for what to cook for your family this month!

Many of you messaged me on Instagram after I shared my Power Bowls on IG Stories asking for the recipe, so here it is! I love this recipe for so many reasons. You’ll see from the recipe and photos in this post, I veered off the meal plan calendar just a bit this week adding in some yellow bell peppers and tomatoes and then no olives. While I don’t mind having so many repeat meals in the month as it does help make meal planning easy for me, switching up an ingredient or two can really help the meal not feel so redundant.

Besides tasting great, these Power Bowls are also so incredibly healthy and good for you too! I love that these bowls are packed with fiber. Fiber is important to support hormone health, gut health, bowel regularity and blood sugar levels.

Plant-Based Recipes For Kids

My kids eat the same dinners that we do, however, I’ll offer the dinner in a different way. For example from this meal on a plate I added black beans, potatoes, yellow bell pepper, avocado and then a little salad with the dressing my kids prefer. Both my kids like the ingredients separated versus in a big bowl, so they enjoy a deconstructed version of this power bowl!

How Does Fiber Support Gut Health

Consuming foods with fiber is important for gut health, bowel regularity and immune health! Did you know that 70% of your immune system is found in the walls of your gut? Eating a variety of plants, around 30 different plant foods per week, has been shown to feed good gut microbes and in turn support your immunity! Prebiotics found in plant foods feed your healthy gut bacteria, known as probiotics. These probiotics release short chain fatty acids (SCFA) into the body, which help regulate the function of immune cells!

I love that this Power Bowl recipe contains over 11 different plant-based foods in one meal (including the dressing!)

Health Benefits of Avocados

Avocados are an excellent source of potassium, antioxidant vitamin E, B vitamins (which give us energy), fiber and monounsaturated fat. Half of a medium avocado contains approximately 7 grams of fiber! Fiber is important for maintaining gut health. Optimal gut health is important to help lower your risk of inflammation.

Adding healthy fats to a meals such as avocado, is a great way to increase satiety (feeling full longer) and manage blood sugar levels which is important for energy and hormone health.

Health Benefits of Beans

Beans are a great way to consume plant-based protein. Research has shown that just 4 servings of beans per week can lower your rise of heart disease by 14% (1)! A plant-based diet rich in beans may also improve brain function (2). The long-loved Blue Zones populations, eat about 1 cup a day of beans. There are so many amazing benefits to consuming beans plus they are very budget-friendly.

Plant-Based Family Dinner Recipe: Power Bowls!

Power Bowls

Prep Time 10 minutes
Cook Time 1 hour
Servings 4

Ingredients

  • 1 large sweet potato orange, yellow or purple
  • 1 tbsp unrefined coconut oil
  • 1-2 head romaine lettuce chopped
  • 2 cups black beans drained & rinsed
  • 1 mini cucumber sliced
  • 1 avocado sliced
  • 1 cup grape tomatoes
  • 1 yellow bell pepper sliced
  • 4 cooked beets sliced

Instructions

  • Rinsed & scrub the sweet potato, cut away any bad spots. Chop and toss with coconut oil.
  • Preheat oven to 350 degree Fahrenheit.
  • Spread in a baking dish and roast in a preheated 350 degree Fahrenheit oven for 30 minutes. Stirring twice.
  • Turn the oven up to 400 degrees Fahrenheit and roast for 15-20 minutes. Until the spuds are soft and the skin is crispy.
  • Build your Power Bowl and top with dressing of choice, my go-to is our Cashew Caesar!

Notes

This recipe serves 4 people.
With a power bowl like this, the ingredient amounts are not important! You can add as much or as little of each item as your heart desires!

Dairy-Free Caesar Salad Dressing

This is my favorite dairy-free caesar dressing! It’s so flavorful, creamy and the cashews provide a healthy fat and fiber to this recipe. To note, this recipe only works with cashews, other nuts will not yield the same look, texture or flavor.

Cashew Caesar

Servings 4

Ingredients

  • 1/2 cup cashews – soaked overnight drained & rinsed
  • 1/2 cup filtered water
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon capers with water
  • 1 teaspoon yellow mustard
  • 1 teaspoon liquid aminos
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • Pinch black pepper
  • Pinch sea salt

Instructions

  • Add everything to a high speed blender and blend on high until smooth and creamy.

Notes

1) Occasionally I will add a dash or two of nutritional yeast.
2) If you prefer a caesar with a kick (and immune boosting power) swap the garlic powder for a clove of raw garlic!
3) Quick soak the cashews with boiling water for just 30 minutes.

Health Benefits of Ingredients

Lemon

The antioxidants found in lemons have properties that can protect cells against oxidative stress. Oxidative stress can lead to inflammation, which is a precursor to cardiovascular disease.

Lemons also contain vitamin C, which has been shown to aid in decreasing the severity and duration of sickness with having adequate levels in the body.

Maple Syrup

Pure maple syrup is an excellent source of manganese and a good source of riboflavin. Pure maple syrup is also a source of calcium, thiamin, potassium, and copper. One serving of pure maple syrup (2 tablespoons) contains 35% of the Daily Value of Manganese and 15% for Riboflavin.

Orange Upside Down Cakes

Prep Time 15 minutes
Cook Time 25 minutes
Servings 12 cakes

Ingredients

  • 5 Limoneira mandarin clementine oranges
  • ¼ cup vegan butter
  • ¼ cup granulated sugar
  • 2 cups blanched almond flour
  • ½ cup cassava flour
  • ½ tablespoon baking soda
  • 1 teaspoon salt
  • 3 eggs
  • cup real maple syrup
  • ¼ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 tablespoons limoneira lemon juice

Instructions

  • Cut oranges into 12 thin slices.
  • Add orange slices to boiling water and simmer for 3 minutes, then lay out on a paper towel to dry.
  • Divide the butter and sugar into a silicone 12-cupcake pan. This will be about 1 teaspoon of each butter and sugar into each cupcake mold.
  • Bake the butter and sugar mixture in a 350 degree Fahrenheit oven for about 3 minutes.
  • Next, whisk the almond flour, cassava flour, baking soda and salt in a medium bowl.
  • Then, whisk the eggs, maple syrup, coconut oil, vanilla extract and lemon juice in a large bowl.
  • Add the dry ingredients into the large bowl with the wet ingredients and stir until combined.
  • Place one blanched orange slice into the melted butter / sugar mixture in each cupcake mold, and top with cake batter.
  • Bake in a 350 degree Fahrenheit oven for about 25 minutes.
  • Let cool and enjoy!
